They grow their mushrooms indoors in environments that are carefully controlled to provide the optimal temperature, humidity, and light for each variety. They operate out of a 43,000-square-foot facility in Sebastopol, California. In an area of just over an acre, they harvest over 15,000 lbs. every week!
Their organic mushrooms are grown on oak shavings, a waste product from lumber mills. The spent substrate is composted and returned to the land, thus completing a cycle of sustainable farming. Many farms pack their mushroom substrate into plastic bags. However, Gourmet Mushrooms mostly use bottles because plastic bags can’t be reused or recycled. Their bottles can be used over and over and then recycled at the end of their useful life.
